Italian Meatloaf

People often say they don't like meatloaf, but many people love meatballs! Think of this meatloaf as a giant meatball. Lean ground beef, garlic and Italian seasoning mix with Parmesan to make a tender meatloaf. It all gets topped off with our Tomato & Basil Pasta Sauce and lots of cheese! We love this served with a side of pasta or roasted garlic smashed potatoes.

2 pounds lean ground beef
1 eggs, lightly beaten
1/2 cup Italian bread crumbs
1/2 small onion, chopped
2 garlic cloves, crushed
1 teaspoon Italian seasoning
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon fennel
1/8 teaspoon red chili flakes
1/4 cup Parmesan cheese
1/4 cup chopped fresh parsley
Salt and black pepper to taste
1 (24 ounce) jar
Tuttorosso® Pasta Sauce - Tomato & Basil
1 1/2 cups shredded mozzarella cheese
Instructions
Preheat oven to 350º F
In a large bowl, combine ground beef, egg, bread crumbs, onion, garlic, Italian seasoning, oregano, basil, fennel, pepper flakes, Parmesan cheese, parsley, salt and pepper. With your hands, gently mix until everything is combined being careful not to overwork.
Form into a loaf and place in a 9x13 baking dish that has been sprayed with nonstick spray. Shape loaf trying to get thickness as even as you can for even cooking. Spread half of the pasta sauce over the meatloaf. Bake for 40 minutes.
Remove from oven, spread remaining pasta sauce over meatloaf and cook an additional 15-20 minutes. Internal temperature should reach 160º F.
Remove meatloaf from oven, top with shredded mozzarella cheese. Return to oven and melt cheese. You can brown the cheese by turning on broiler if you choose.
Let meatloaf set for 5-10 minutes before cutting. Serve immediately.
