Pork Chops with Tomato Relish

When you need to impress your dinner guests, whip out this recipe. Juicy pork chops soak up this expertly seasoned tomato relish. Its garlic, basil, oregano and onion flavors compliment the pork perfectly.

ingredients

1 (28 ounce) can Tuttorosso® Peeled Plum Italian Style Tomatoes, drained and chopped
3/4 cup chopped red onion
1/4 cup red wine vinegar
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
1 tablespoon fresh chopped basil
1 tablespoon fresh chopped oregano
Salt and black pepper to taste
4 center cut pork chops, 3/4 inch to 1 inch thick or chicken breast or fish fillets

instructions

  • Combine first seven (7) ingredients in a small bowl to make relish. Season with salt and black pepper. Let stand for at least 15 minutes or up to 1 hour.
  • Arrange meat in baking dish. Drain liquid from relish and spoon over pork chops. Allow meat to marinate at least 15 minutes turning occasionally.
  • Preheat barbecue grill or grill pan over medium heat. Grill or braise meat until cooked through (internal temperature of 145º).
  • Transfer meat to plates and top with relish. Serve immediately.

    This makes a lot of relish.  But is it ever good!  I made it the night ahead to let the flavors blend and make dinner the next night easy to put together.  All I had to do is cook the chops and serve.  So full of flavor and good.
