Savory Sausage Sandwich

8, 1/2 of a baguette
Classic street food you would find at any Italian festival. Italian sausage links, chopped onion and minced garlic combined with a fresh, tangy tomato sauce make these zesty sandwiches an instant hit.

ingredients

4 Italian sausage links
2 tablespoons extra virgin olive oil
1 onion, sliced
6 cloves garlic, sliced
2 cups sliced fresh mushrooms
2 tablespoons chopped fresh parsley
2 red bell peppers, sliced
1 (28 ounce) can Tuttorosso® Crushed Tomatoes with basil
4 small baguette
6 ounces sliced mozzarella cheese

instructions

  • In a large skillet cook sausages until browned on all sides, 4-6 minutes each side, remove from skillet and keep warm
  • Heat oil in same skillet, add onions, garlic, mushrooms, parsley and peppers sauté until veggies are just soft. Stir in crushed tomatoes. Bring to a boil; reduce heat and simmer for 10 minutes.
  • Place sausage links onto each baguette, top with pepper and tomato mixture. Place slice of cheese on each sausage and place under broiler until cheese is melted. Cut sandwich in half before serving.
